Ingredients
  

For the Pancakes

  • 250 g flour
  • 2 pcs egg
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 200 ml milk
  • 100 ml brewed espresso
  • 200 ml soda water
  • 30 g melted butter
  • 30 ml cooking oil

For the Cream

  • 3 pcs egg yolk
  • 3 tbsp icing sugar
  • 2 tbsp Amaretto liqueur
  • 250 g mascarpone
  • 20 ml cream (30% fat)
  • Cocoa powder

For the Pancakes

    Prepare the Batter

    • Start by sifting the flour into a bowl. Add the eggs, brown sugar, salt, milk, and brewed espresso. Whisk everything together until the batter is smooth.

    Add the Soda Water and Butter

    • Gradually add soda water to the mixture until you achieve a medium-thick batter. Finally, mix in the melted butter for added richness.

    Rest the Batter

    • Let the batter rest for at least 30 minutes. This helps the pancakes cook more evenly and ensures they are light and fluffy.

    Cook the Pancakes

    • Heat a pan and coat it with a mixture of melted butter and cooking oil. Once the pan is hot, pour in the batter to form pancakes. Cook each side until golden brown, then set aside to cool.

    For the Cream

      Make the Cream

      • In a mixing bowl, whisk together the egg yolks, icing sugar, and Amaretto liqueur. Place the bowl over a pot of boiling water and whisk until the mixture becomes thick and creamy. This should take about 2 minutes.

      Cool the Cream

      • Let the egg yolk mixture cool completely.

      Whip the Cream and Mascarpone

      • Once the mixture is cool, whip it with mascarpone cheese until it becomes light and fluffy. Fold in the whipped cream until everything is well combined.

      Assemble the Cake

        Layer the Pancakes

        • On a serving plate, start layering the pancakes with the mascarpone cream. Make sure each pancake is covered with a generous amount of cream.

        Dust with Cocoa Powder

        • Once all the pancakes are layered, dust the top with cocoa powder for that classic tiramisu finish.

        Chill and Serve

        • Refrigerate the cake for 1-2 hours to let the flavors meld together. The longer it sits, the better the flavors develop!
