Brew 32 g of coarsely ground coffee with a 300 ml percolator coffee maker.
Spoon 1 tbsp of lavender honey into the glasses, then add 1 cm of freshly cut ginger and half a lemon’s zest.
Bring 250 ml of water to a boil, and pour the mixture into the glasses up to halfway. Let it stand for 1 minute.
Pour 75 ml of freshly brewed coffee into each glass. Stir the drinks and serve with a spoon.
